Chef Bradford Boisvert aims to take advantage of as many local food sources as possible, getting almost all the ingredients for the restaurant from the island and surrounding islands. Chef Boisvert has also taken advantage of the land surrounding the restaurant by putting in raised garden beds to supply the restaurant with its own produce. While the gardens are ever changing from season to season here are a few items you may find; baby lettuce, fresh herbs, peas, Swiss chard, heirloom tomatoes, Russian blue potatoes, purple carrots, and golden beets. Also recently planted are black and red currents, grapes and hazelnut trees. As well Chef Boisvert takes advantage of the wild foods growing on the restaurants property with such things as stinging nettle and blackberries.
The food philosophy of the restaurant is ‘simple is elegant.’ In preparing food we believe in preserving nature's natural beauty. There is no need to mask or hide flavours. This too stands true in our business philosophy. We must operate in a conscious manner for others and our environment, in order for all to be sustainable. Living here in the beautiful Cowichan Valley, it is hard not to appreciate all the wonderful local food products we have only a few steps from our front door. We are proud to be using the fresh, unique local products of the following farms and producers.
