Chef Bradford Boisvert aims to take advantage of as many local food sources as possible, getting almost all the ingredients for the restaurant from the island and surrounding island. Chef Boisvert has also taken advantage of the land surrounding the restaurant by putting in raised garden beds to supply the restaurant with its own produce.  The gardens are currently providing the restaurant with baby lettuce, fresh herbs, peas and Swiss chard, heirloom tomatoes, Russian blue potatoes, purple carrots, and golden beets.

The food philosophy of the restaurant is; simple is elegant. In preparing
food we believe in preserving nature's natural beauty. There is no need to mask or hide flavours. This too stands true in our business philosophy. We must operate in a conscious manner of others and our environment, in order for all to be sustainable. Living here in the beautiful Cowichan Valley, it is hard not to appreciate all the wonderful local food products we have, only a few steps from our front door. We are proud to be using the wonder and unique local products of the following farms and producers.
